I am still at home with a double ankle sprain this week. I took the opportunity to take an inventory of every single food in the house and sorted out my ‘pantry’ (food drawer in the kitchen). As I am planning on going 90% vegetarian, I do want to finish the meat and fish in the freezer as I am too money and waste conscious to throw stuff out. We also have more pasta than I know what to do with even though we hardly eat pasta.

Kale Sundried Tomato Eggy Scramble (Joyous Health)
I am a big fan of Joy McCarthy of Joyous Health and she has some great sounding recipes; this is the first one I’ve tried and I loved it.
In Holland where I live, they have something called ‘boerenkool’ which is part of the cabbage family and I think the closest to US kale. So I used that (although learned it needs to be boiled first!) and even though it took forever as I hadn’t boiled it first, it was delicious. Will definitely be making this again!
Spicy beans and rice (Smith p123)
I’ve been making this recipe for years, it’s quick, easy and delicious. I used some broccoli that was a tad past it’s ‘best by’ date so it went slightly soft but cooked in a little oil with lots of garlic and lemon zest, it was a nice side dish.
